The Staple Vegan Breakfasts You Need In Your Life
I’ll be the first one to tell you I’m not someone who spends their days in the kitchen, I don’t get the high some do at perfecting a recipe or baked good. I simply don’t have the time or desire to do it but that doesn’t mean I don’t like good food. I have found my go-to staples over the years that I can make in minutes, still taste delicious and enjoy with others while still following a vegetarian/vegan lifestyle.
Here are some (all) of my go-to vegetarian and vegan breakfasts so you can try to make your own at home with your own twist :)
Breakfast
1. Eggs on crack
This one is my go-to. Honestly, I have it every morning and you can add your own veggies, seasoning, twist and desires to it. This is my meal every single morning and I never get sick of it but this is coming from someone who loves eggs.
Ingredients: eggs, cheese (your choice of dairy or non-dairy), spinach, jalepeno, onion, butter, mushrooms, etc.
Recipe: Simply scramble your eggs with your choice of mix ins and enjoy :)
2. The on-the-go
Take this on any road trip, hike, workout or drive to work and it won’t dissapoint. Don’t make fun at how simple it really is.
Ingredients: Banana or Apple with Justin’s Honey Almond Butter or Honey Peanut Butter (The almond is better if you’re willing to splurge the extra $5.
3. Treat yourself to Brunch
This is my go-to weekend meal when I’m looking to treat myself and fill up before a big hike. It’s simple (if you can’t tell all of these are) and delicious. The reason I like this brand is they’re protein filled pancakes, health conscious and sourced local and small.
Ingredients: Kodak Pancake Mix - follow directions on the box people
4. Splurge Breakfast
I am no stranger to bagels and the love I have for them. If I could eat them everyday I would but I simply would gain 20 lbs way faster than I’d like. Here’s a treat I will do once in awhile but it can’t be an everyday thing for me but I hope it can be for you.
Ingredients: Bagel, dairy-free cream cheese or hummus, sunny-side up egg, spinach, your choice of cheese, your choice of meat or plant-based deli meat or sausage, etc.
Recipe: Throw it all together in 5 minutes and you have yourself a glorious sandwich.
5. Oats & Woes BB
This is a staple for me and I’m a lover of oatmeal. A few tips I have for those who enjoy oatmeal is don’t buy the packet oatmeal. The amount of hidden sugars and mark up on a box of pre-packaged oatmeal is more than you’d like to know and can be replicated with a huge jar of steel cut oats for way cheaper and some local and organic ingredients. This is up to your desire of what you’d like and can be done to your expectations.
Ingredients: Steel cut non-flavored oats, organic maple syrup, fruit, peanut butter, scoop of protein (if you’d like), etc.
Recipe: Cook the oatmeal in the microwave with water for 2 minutes or pour boiling water on oats, mix in whatever you’d like and tah-dah!
6. Basic like an Avo-Toast
This is a go-to for all the basics and it’s something I ate everyday but I’ll be honest I did end up getting sick of it. But it doesn’t mean you can’t enjoy it and love it everyday for months straight like I did.
Ingredients: Dave’s Killer Bread, Avocado, Siracha, Everything but Bagel seasoning, sprouts, egg (your choice)
Recipe: Toast your bread, spread your avo and fill up with the toppings.
